The best thing we have gotten from America’s Test kitchen isn’t so much a recipe, but rather a method for grilling steak. We watched an episode where they pre-warmed the steaks in an oven at 200 degrees for 20 minutes, then grill them to medium-rare. It makes the juiciest steaks every time!

January 17, 2011We make Braised Cod Peperonata (a variation of Braised Cod Provcal) in the America’s Test Kitchen Family Cookbook about 2 to 3 times a month. It’s so delicious, simple and healthy. We typically serve over quinoa and sometimes add calamata olives.

One we’ve been enjoying a lot lately is the Foolproof Thin-Crust Pizza recipe from the latest issue (December2010/January 2011). It really does make for a fantastic pizza crust. Their Best Blueberry Muffins recipe from May/June 2009 is also a real winner… easily the best blueberry muffins I’ve ever had.

January 17, 2011I love one of the brownie recipes from a Cook’s Illustrated. I think it’s the Chewy Brownie recipe that is supposed to have just the right amount of chew and not be too fudgy. It calls for extra chocolate to bump up the chocolate flavor and a little bit of baking powder. It’s really a great recipe, so good that one day my daughter wanted to use it to impress a new boyfriend that is now her husband! I wonder if the brownies had anything to do with that!
