Ice cream cakes are a treat that I always looked forward to growing up. I typically only encountered this dessert on special occasions, such as a birthday party, and the triple-thread combination of cake, ice cream and frosting pushed the cake to the top of my “favorite dessert” list. For years, the only ice cream cakes I had were ones that came from an ice cream specialty store, but as I began to bake more often myself, I soon realized that making ice cream cakes at home was not too difficult – and it gives you complete control over the flavors of all three components.

The cake pictured here is my favorite vanilla cake layered with chocolate chip cookie dough ice cream, topped with vanilla frosting and garnished with homemade chocolate chip cookies. It’s a great choice for a chocolate chip cookie lover and a combination that I never get tired of.
