I am a huge blondie fan and this recipe for One Bowl Butterscotch Blondies, which I’m sharing over on the Craftsy blog (it’s free!!), is a great recipe to have on hand if you are, too. The chewy, buttery bar cookies have a similar texture to brownies, but contain no chocolate. Instead, the bars are made with brown sugar and vanilla, which combine with the butter in the batter to give the bars a wonderful butterscotch flavor. You’ll be able to mix up this batter by hand in just a couple of minutes, so you’ll be able to have the bars ready to eat in no time flat. I added butterscotch chips to this batch, however toasted walnuts and pecans also make a nice addition to the bars, adding a little crunch to each piece. And if you still need a chocolate fix, you can also sub out the butterscotch chips for chocolate chips.
