Anyone who has been reading Baking Bites for a while will know that I’m a big cookies n’ cream fan. Not only do I keep an eye out for all those limited edition Oreos, but I’ve been known to use both regular and limited edition cookies in everything from scones to cheesecakes. Cookies n’ cream cupcakes are another way to enjoy these classic black and white sandwich cookies, where tender vanilla cake is loaded with crushed cookies for a delicious cookies n’ cream flavor. Over on the Craftsy blog (it’s free!!), I’m sharing my recipe for Oreo Cupcakes and some tips for decorating them once they’re baked. The cupcake recipe is very easy and a lot of fun to make. I think that crushing up the cookies for the batter is a particularly good way to relieve stress! The cupcakes are topped with a cookies n’ cream frosting that is made using only the chocolate wafer crumbs, which add flavor and color to the frosting.
If you bake a batch and want to take things really over-the-top, split the cupcakes and fill them with a scoop of homemade cookies n’ cream ice cream to make the ultimate cookies n’ cream mini ice cream cake!
