I use citrus all year round, but citrus season is in the winter and early spring and that is when everything from limes to tangerines are at their peak. Citrus fruits are very versatile because they are several ways that you can pull flavor from them. You can use the zest for a pungent oil, the juice for its bright sweetness or the whole fruit for both texture and flavor. Over at the Craftsy blog (it’s free!!)
