We have all had times when we want to bake a cake, but don’t have the time, energy or ingredients on hand to make one. You might be out of eggs or butter, you might have had a long day at work, or you simply don’t want to face the cleanup after putting the batter in the oven. This is when you need to have an easy cake recipe in your back pocket, a recipe that requires very little effort and has ingredients that you probably have in your cupboard right now. My favorite easy cake recipe is this One-Bowl Eggless Chocolate Cake, and I’m sharing the recipe over at the Craftsy blog (it’s free!). The moist, fluffy cake delivers a tremendous amount of chocolate flavor in every bite and uses a rather unusual ingredient instead of eggs to help give the cake a nice rise. Once you’ve made it, I know that it will make it into your regular rotation.
The same recipe can be used to make layer cakes, if you divide the recipe into round cake pans instead of using the square pan that I recommend in the original post. You can also double the recipe to fill up a bundt pan, if you are looking for a larger cake to feed a crowd.
