There is never a shortage of recipes to choose from for Bites from other Blogs, and there were so many delicious sounding treats out there that it was hard to pick a theme to work with this time around. This is more of a grab bag of delicious sounding recipes that I could eat any time – and you probably could, too!
- The S’mores Cookies that Fortune Goodies recently baked up are a great end-of-summer cookie, as they deliver a big nod to that campfire favorite. They’re made with buttery cookie dough that is packed with graham cracker crumbs, and a mixture of mini marshmallows and mini Hershey’s kisses are folded into the dough before baking. The kisses are a little bit bigger than regular chocolate chips and are a nice addition here, since Hershey’s bars are the standard chocolate for making s’mores.
- Sugary Winzy Double Espresso Coffee Chiffon Cake is a cake for coffee lovers. It is a soft and airy cake that has a lot of flavor in a very light package. The cake itself is flavored with instant espresso powder. You could eat the cake alone, but this one is covered with an espresso-flavored meringue frosting that is just as light as the cake itself and adds yet another layer of coffee flavor to the finished dessert.
- Another coffee-loving recipe comes from Yeah, ImmaEatThat. Her Dark Chocolate Espresso Cookies Stuffed with Almond Butter have a lot of coffee flavor coupled with some healthier ingredients that mean you will never feel guilty going back for seconds. The cookies are made with a blend of oat flour, almond flour, cocoa powder and instant coffee, and are sweetened with brown sugar and honey. The dough is shaped around little balls of almond butter before baking. The almond butter blends well with the almond flour in the dough and is a nice little surprise to find when you take a bite.
- I am Baker‘s Neapolitan Rose Spritz Cookie are almost too pretty to eat. The delicate pink, white and chocolate colored cookies are a nod to the strawberry, vanilla and chocolate flvors in neapolitan ice cream, piped in beautiful rose shapes using a pastry bag. It might take you a few tries to get your roses just right, but even if they turn out to be a little funky, they will still taste delicious. The buttery cookies are all flavored with vanilla and almond extracts, then strawberry extract is added to the pink dough and cocoa powder gives the chocolate its color and flavor.
