The only thing better than having a basket full of fresh strawberries is having a whole list of great things to do with them. You always want to start out by choosing the best strawberries you can find because they’ll make all of your creations that much better. A strawberry huller or slicer can make life a little easier, but the only tool you really need to get started is a sharp knife.
- Strawberry shortcake is an obvious recipe to start out with, so a Buttermilk Strawberry Shortcake is a good place to start. If you want a more impressive shortcake, opt for a bigger, crowd-feeding Olive Oil Strawberry Shortcake that uses a fruity, olive-oil infused cake as its base.
- There are plenty of other recipes that uses fresh strawberries in addition to shortcake. - Strawberries can be cooked into other baked goods, too. Strawberry Lemon Drop Cupcakes and Strawberry Lemonade Muffins are variations on a strawberry theme that put those berries front and center. Strawberry Lemonade Bars are a twist on lemon bars that use the same strawberry and lemon flavor combination in a different way.
- There are also many ways to take strawberries in a more savory direction. Strawberry Goat Cheese Scones have elements of both sweet and savory in them, with juicy berries and creamy, slightly salty cheese throughout. Roasted Strawberry and Tomato Salsa is even more savory, and fresh strawberries are a wonderful backdrop for spicy, smoky chipotle peppers in this dip that goes well with all kinds of chips, as well as with chicken or pork!

August 20, 2010These all sound amazing. We are lucky in Oregon to keep strawberries around until October. And I totally adore that Olive Oil Shortcake recipe. I’ve made it several times and I’m never disappointed. Love the fruity tones from the olive oil!
