Over the years, strawberry daiquiris developed a bad reputation. They were artificially colored, artificially flavored and so sweet that it was hard to make it through the giant glasses they were served in. They were always cold, however, so they remained a popular poolside drink for vacationers (including myself!!) in hot, tropical climes. If you ditch the bottled mixes, you can bring this drink back from the edge of mediocrity and make it delicious once more. This Blended Strawberry Daiquiri uses only fresh ingredients – and I can promise it will taste amazing whether you are sipping it poolside or not.
The daiquiri starts with fresh strawberries – and lots of them. They’re combined with fresh lime juice, white rum, sugar and ice, then everything is blended until smooth. The brightness of fresh lime juice brings out the flavor of the berries, giving the drink a flavor that is both sweet and refreshing, not cloying. I added a bit of sugar to help give the drink a creamier texture, as well as to compensate for any berries that might be a touch less sweet than the others. The result is velvety smooth, loaded with strawberry flavor and so easy to drink you’ll find yourself back in the kitchen preparing a second batch in no time.
Fresh strawberries are the way to go with this recipe. They bring in the best flavor and give the best texture to the finished drink, which should be cold and creamy like a smoothie, not overly icy. Frozen strawberries are a close second, but they’re just not quite the same. This drink is at its best when berries are in season – which, fortunately, is the hottest part of the year and perfect blended daiquiri weather. This recipe makes two servings, so it is perfect for sharing. Feel free to scale it up if you’re entertaining.

Blended Strawberry Daiquiri
1 cup fresh strawberries, hulled
4 oz white rum
2 oz fresh lime juice
3 tbsp sugar
1 1/2 cups ice
Combine all ingredients in the blender. Blend at low speed to crush the ice, then turn the blender up to high and blend until smooth. Pour into two glasses. Garnish with a lime wheel and a fresh strawberry.
