Peppermint hot chocolate is one of my favorite holiday drinks and I love taking those flavors and transforming them into other holiday treats. While I love a mug of hot chocolate, it simply isn’t quite as convenient to take to a holiday party as a bundt cake or a plate of cookies. These Chocolate Peppermint Whoopie Pies perfectly capture both the chocolate and peppermint elements of that classic beverage! The whoopie pies are made rounds of thick, soft chocolate cake that sandwich a creamy peppermint filling. Rolling them in crushed candy canes before serving gives them a nice pop of color and adds a bit of crunch. The pies can be prepared a day or so before you intend to serve them, but should be stored in an airtight container so that they remain fresh before they are arranged on a serving platter.
