Pumpkin spice lattes are so popular during the fall – whether you are drinking them at Starbucks or one of the many other coffee shops that offers a similar flavor – that, for many, their appearance on menu boards is what officially kicks off the season. As a pumpkin pie fan, I do enjoy the drinks and, this year, I made my own Pumpkin Spice Extract that allows me to easily infuse spices like cinnamon, allspice and cloves into a wide variety of treats. Baked goods are a natural choice for a flavored extract, but they can also be used to add flavor to coffee drinks like this Pumpkin Spice Latte with Pumpkin Spice Whipped Cream, which has seasonal spice in both the coffee and the whipped cream used to top it!

The coffee drink is sweet, satisfying and delivers plenty of pumpkin spice flavor in every sip. It is a wonderful way to start off your day on a crisp, cool fall morning. The drink itself is very easy to make, though the extract needs to be prepared well in advance to allow the spice flavors to develop. While it may seem like there is quite a bit of sugar stirred in, keep in mind that most coffee drinks that you’ll find at coffee shops are sweetened with a flavored syrup, while this one only uses granulated sugar. Some sugar is necessary to bring out the full flavor of the pumpkin spice, but you can play around with the amount of sugar to suit your preferences when you make it at home.

Using pumpkin spiced whipped cream adds a really nice finishing touch to the drink and adds even more of those wonderfully warm spices to each sip. I whip up the cream to soft peaks – rather than stiff peaks – because the softer whipped cream looks a bit nicer on top of the hot drink and is easier to spoon on. The recipe for the pumpkin spice whipped cream seems like it makes a very small amount of whipped cream – and it does, because the quantity given is just for one drink. You can easily make a whole batch of pumpkin spice whipped cream using your extract by playing around with the ratios and starting with a lot more heavy cream. The whipped cream is delicious on top of the pumpkin spice latte, however it also pairs well with a variety of other fall desserts, such as pumpkin pie, apple pie and spice cakes.

Pumpkin Spice Latte with Pumpkin Spice Whipped Cream
4-oz hot, strong coffee*
2 tbsp sugar (or to taste)
1 tsp Pumpkin Spice Extract
6-oz hot or steamed milk
Pumpkin Spice Whipped Cream (recipe below)

In a large mug, stir together hot coffee, sugar and pumpkin spice extract. Pour in hot milk and top with pumpkin spice whipped cream. Sprinkle with cinnamon or garnish with a cinnamon stick before serving.

Serves 1.

*If you have an espresso machine, you can use 2 oz of espresso and 8 oz of milk in this recipe.

Pumpkin Spice Whipped Cream
2-oz heavy cream
1/2 tbsp confectioners’ sugar
1 tsp Pumpkin Spice Extract

In a small bowl, beat heavy cream to soft peaks. Beat in confectioner’s sugar and pumpkin spice extract. Spoon whipped cream on top of latte just before serving.
