Meringue powder might not be a staple in your pantry, but if you’re a baker, maybe it should be. I will say here that I think it’s a great ingredient to have on hand in your pantry, even if you don’t use it regularly. Since it has a long shelf life, a small container will go a long way and open you up to projects (such as royal icing cookies) that you might not ordinarily try. It’s not usually in stock at grocery stores, but it is easy to find at craft stores with large cake/cookie decorating sections and at kitchen specialty stores.
