Spicy, sweet gingerbread is a classic holiday cake for good reason. You can make layer cake in any format, from a cupcake to a towering layer cake. The easiest way to go is to bake a bundt cake, which looks pretty enough for entertaining, but only requires the use of a single pan. I’m sharing my recipe for this Easy Gingerbread Bundt Cake over on the Craftsy blog (it’s free!!) so that you can give it a try during the holiday season. The bundt cake is loaded with warm molasses and spices like ginger, cinnamon and cloves. It is finished with a lemon glaze. You can top a gingerbread cake with any frosting, of course, but lemon is a traditional topping for gingerbread because the bright citrus makes such a strong contrast with the spicy cake.
All the molasses in the cake batter makes this cake very moist, which means that it also keeps well for several days after baking. You’ll be able to serve this cake for holiday guests and have at least a few slices to nibble on with your coffee in the days that follow.
