Last year around this time, I made my own homemade Pumpkin Spice Extract to use when baking. The extract was a huge hit and I am already making another batch for this year, as it takes a couple of weeks to infuse. If you can’t wait to make your own – or want to get a jump start on your pumpkin spice baking while you’re waiting for your DIY extract to infuse – I am happy to share the news that there are a couple of pumpkin spice extracts out there that you can buy. One of these is the Rodelle Pumpkin Spice Extract, a new addition to the lineup for my favorite vanilla extract producer.
The extract uses cinnamon, cloves, vanilla, nutmeg and ginger for its flavoring – and it is intensely flavored. In fact, the extract smells incredibly spicy when you take a sniff, almost like a Red Hot candy, but more complex and layered. You can use it just like vanilla extract in any recipe that needs a little pumpkin spice. Though it is potent, it is not as overwhelming as almond extract is, so I would use 1 teaspoon in a recipe that called for 1 teaspoon of vanilla to get good results. I used it in some cookies and a cake and the spices translated clearly to the finished baked goods with no extra spices added. The extract is clear, which means that it is a good choice for frostings, as well as for cakes, cookies and pies. It’s a great resource to keep on hand for your fall and holiday baking.
