Summer means a bumper crop of zucchinis for everyone who might try to grow them, even if you aren’t typically known for your green thumb. I’ve almost given up growing them because I always have more than I can use, but I stick with it because it is easy for me to give away loaves of my Chocolate Zucchini Bread to friends and family, even after they have started refusing extra summer squash from my garden. I’m sharing the recipe over on the Craftsy blog right now (it’s free!) and it is well worth taking a peek if you need an easy go-to recipe for using up your zucchini this season. The bread is moist, tender and has a great chocolate flavor. You can even add chocolate chips if you want to make it more dessert-like! Feel free to double or triple the recipe as needed.
I recommend serving the loaf as-is and I typically pair it with a cup of coffee in the morning or afternoon. It is also very good with cream cheese or butter, if you’re serving it as a brunch item, and can be paired with ice cream and a drizzle of chocolate fudge for dessert.
