I can’t resist a good brunch. It’s an excuse to make up some fun drinks – both alcoholic and nonalcoholic – and make a variety of sweet and savory dishes to entertain friends and family with. I often make baked egg dishes because they can be prepared in advance and are large enough to serve a crowd. If you’re looking for a more unique egg dish for your next brunch, you have to try these fluffy Baked Egg Clouds, which I posted about over on the Craftsy blog (it’s free!). The eggs are baked in the oven and this technique yields a perfectly cooked yolk nestled in a “cloud” of meringue. You can make as many or as few as you need and the baking time will be exactly the same, which makes it easy to incorporate these into your brunch menu. You’ll want to make 1-2 per person, depending on what the other items you’re serving for brunch are and how stuffed you want people to be at the end of the meal!!
