Easter Peeps S’mores Dip

Easter Peeps S'mores Dip

Gooey, rich s’mores are one of my favorite summer treats. They’re traditionally made over the campfire, but you can melt your marshmallows over any heat source available. This Easter Peeps S’mores Dip is made in the oven and it is a version of s’mores that can be shared by a big group easily – and it has a colorful twist on classic s’mores because it uses Peeps!

You can use chick or bunny Peeps to make this dessert. I used a combination of yellow and blue Peep chicks (yellow chicks are the original) and arranged rings of them over the top of a layer of chopped dark chocolate. Chocolate chips will also work for this recipe, so feel free to use them if you have some on hand or simply don’t feel like chopping up a whole bunch of chocolate at the moment!

I used a 10-inch, oven-safe pan, which made a generous batch of s’mores. You may find that you are able to squeeze in an extra Peep or two, depending on the size of the pan that you are using. After a few minutes in the oven, the chocolate will have melted and the Peeps will be lightly browned.

Serve the dip with a pile of graham crackers, which can be dipped directly into the marshmallow and chocolate mixture. It is sweet, rich and incredibly delicious. The heads of the Peeps are my favorite part of this dip because the sugar on their exterior caramelizes in the oven, giving the tops of the marshmallows a caramelized flavor and bruleed texture. Beneath the sugar layer, the marshmallows are soft and melty. The s’mores will stay warm and dip-able for a while after being prepared because your pan is going to retain heat from the oven, but you should start to eat them right away for best results. If you find that you need to reheat the dip, simply pop it back into the oven for 4-6 minutes to remelt the chocolate.

1/2 tbsp butter
2 cups dark chocolate chips or chocolate chunks (12-oz)
approx 20 Peeps

Preheat oven to 425F
Place butter in the bottom of a 10-inch oven-safe skillet. Spread chocolate chips in an even layer over the base of the pan. Arrange Peeps (approximately 14-15) in a ring around the outside of the pan. Arrange a smaller circle of Peeps within the larger ring and place one Peep in the center.
Bake for 5-7 minutes, until the Peeps begin to caramelize and turn golden brown. Serve warm, with graham crackers.
