Artichokes are one of my favorite vegetables. Not only are they beautiful to look at – cooked or uncooked – but they are delicious. I find that many people only eat artichokes when they are out, rather than cooking them at home, because they are slow to cook and can be a bit intimidating to work with when you haven’t cooked all that many. Let me reassure you that artichokes are much easier to cook than you might think. I’m sharing my recipe for Making Grilled Artichokes at Home over at the Craftsy blog (it’s free!). With their charred edges and slightly smokey flavor, grilled artichokes are a wonderful dish to add to your next summer cookout. The veggies need to be par-cooked before going onto the grill, but that preparation can be done well in advance and they only take a few minutes over the open flame once you get them on.
The finished artichokes can be served with one of my favorite aiolis (recipe in the post on Craftsy!) or with a simple combination of lemon, olive oil and salt. I’ve even served them with a side of barbecue sauce, if I’m putting them out alongside some bbq chicken or ribs!
