I love to bake with citrus and especially with lemons when they are in season. Both their juice and zest are so full of flavor that it is easy to make a delicious baked good, whether I’m making lemon bars or a lemon pound cake. Lemon goes with a lot of other flavors and, even by itself, just seems to brighten everything up. This Nordic Ware Lemon Loaf Pan is a neat loaf pan that will allow you to showcase lemon cakes in a very unique way. The shaped pan has a design of lemons – whole and sliced – and leaves on its top. When you bake a loaf cake in it, you simply turn the cake out and leave it bottom-side up, so that the 3D lemon pattern is on display. It’s pretty enough that your cake won’t need any frosting and it will be very eye catching when compared to standard loaf pans.
I’ve used similar pans to this before with great results. The pan is made of heavy duty aluminum and has a nonstick interior, but to ensure that you get all the details of the cut lemons, it is best to lightly grease and flour the pan before using just to be on the safe side. Here are a few lemon loaf cake recipes to get you started:
- Lemon Coconut Bread
- Meyer Lemon Gingerbread
- Lemon Buttermilk Pound Cake (makes 2 loaves)

February 8, 2014I got this pan on clearance at a Christmas Tree Shop for around $3.50 a couple of weeks ago. I used it for a Meyer Lemon Pound Cake and it came out lovely!
