A lemon drop is a cocktail that is made with vodka, lemon juice and sugar – rather like a grown up version of lemonade. It’s a mix of sweet and sour (with some vodka, of course) and it’s pretty refreshing as cocktails go. It also has a lovely yellow color to it that is part of what made me think that a lemon drop would be a great vehicle for my Peep-Infused Vodka.
The Peep vodka doesn’t have a strong Peep flavor, but what it does have is a subtle sweetness and a cheerful yellow hue – both of which are welcome additions to any lemon drop. I simply substituted my Peep vodka for plain vodka in a basic lemon drop recipe and enjoyed the results. The cocktail does benefit from that extra sweetness from the Peeps – and, of course, looks perfectly festive with a yellow Peep as garnish.
I like to add a little bit of limoncello – a lemon-infused liqueur – to my lemon drops, both for a little extra lemon flavor and to amp up the color. I already had plenty of color in this drink, but the limoncello is still a nice addition for the extra lemon flavor if you have some on hand. In the end, this drink is delicious whether you make it with Peep-infused vodka or with regular vodka, but both the Peep vodka and the yellow Peep garnish make it a fun choice for Easter brunch.
Peep Vodka Lemon Drop
1 1/2 oz Peep-infused Vodka
1 1/2 oz limoncello
3/4 oz fresh lemon juice
1/2 oz simple syrup (or 2 tsp sugar)
ice
sugar, for garnish
yellow Peep, for garnish
Run a slice of lemon around the rim of a martini glass, then dip in sugar to rim the glass.
In a cocktail shaker, combine Peep-infused vodka, limoncello, lemon juice, sugar and ice. Cover shaker and shake vigorously for about 30 seconds.
Strain drink into your martini glass and garnish with a yellow Peep.
