The name alone of Chewy Gooey Crispy Crunchy Melt-in-Your-Mouth is enough to make you crave a freshly baked, homemade cookie. Flavor is always important to a cookie, but when Alice Medrich decided to organize her newest cookie book by texture it was a stroke of brilliance because the texture of a freshly baked cookie is exactly what keeps us all in the kitchen baking.
The book opens with a few introductory pages and some explanation on how the book is laid out. The chapters are Crisp, Crunchy, Chunky, Chewy, Gooey, Flaky and Melt-in-your-Mouth. The names are tempting and the recipes live up to expectations, delivering the perfect textures suggested by the chapter titles. The book contains lots of new recipes, as well as many classic Alice Medrich recipes and techniques that she previously featured in other cookbooks. This is great news to many fans of her recipes, as some of her popular books have been out of print for some time now. For instance, you can find instructions on how to bake Perfect Fudgy Brownies using a water bath to quickly cool the just-cooked batter. There are plenty of recipes for whole grain cookies and goodies, as well as low fat treats for those looking for something lighter.
The recipes are well written out and are easy to follow along with, but many of the recipes have very specific instructions. Some of these, like plunging a pan full of hot brownie batter (and it does specify the type of pan), might sound odd at first but really are imperative to getting the best result. Stick with the recipes and you won’t be disappointed when you take that first bite – or the last bite, for that matter. The recipes are all very flavorful and there are plenty of lovely pictures throughout to guide you through basic techniques, like lining pans, and help you pick out which recipe to tackle next.
