How to turn aebleskiver

Aebleskiver are popping up all over the place. The shaped pans are available in just about every kitchen store, while just a few short years ago, very few consumers (US consumers, at least, as the pans are a Danish) had heard of the pancakes. Well, some people still aren’t sure on the name because those kitchen stores tend to prefer calling them “pancake puffs,” “filled pancakes” or other similar nicknames. Whatever they’re called, the fluffy pancake balls are tasty and easy to make. The only trick to them is getting them turned over in the pan so that they cook evenly and actually turn out to be little spheres, rather than slightly smushed dough balls.

The traditional way of turning aebleskiver is to use a crochet hook to snag the side of a pancake and give it a quick turn halfway through the cooking process. For most of us, a long, thin stick or skewer will work just as well. The skewer should be inserted into the top of the pancake at an angle, so it pokes through the “shell” that is already cooked against the pan. Once the skewer is in, it should be easy to give the pancake a quick turn. You’ll get an even brown all over, and won’t be able to see the tiny hole you made when turning the pancake.

    I love aebleskiver! It’s so fun to see them becoming more and more popular. My husband lived in Denmark for a few years, and I first learned how to make them from him. Yours look absolutely perfect!

    I think that the best way to get very round aebleskivers is to only do a ninety degree turn forward then a ninety degree turn to the right, then turn it so the remaining hole is on the bottom. The batter will fill in and you will have a nice hole in the middle and a very spherical shape.

    i bought one of the pans at williams sonoma a few months ago and even though it’s going to take LOTS of practice, i had fun giving it a try! and they were super yummy! thanks for the tips!

    I agree Mandee Jo. I was taught by a chef to prepare them this way. The aebleskiver should be light and fluffy. You achieve this by turning each 3 times. The outside is puffy looking – it often has the appearance of having a seam. Also, don’t fill the pan too full and keep your flame fairly low. You can fill aebleskivers with a cream filling, but I’m too much in a hurry to eat them and love them served with jam and cream cheese!

    So pancake puffs are actually aebleskivers? Interesting! You can even load em up with different fillings like cheese and fruit, chocolate and pie fillings. Banana, vanilla yogurt filling is good too. Yum yum!
