- I was going to star off this weeks Bites with a link to the summery strawberry shortcakes at I love Milk and Cookies, as a last hurrah for summer in the northern hemisphere and a way to welcome it into the southern. But then I saw JenJen’s Apple Cider Donuts and couldn’t resist the spice and fall flavor combination. Plus, the donuts are baked, not fried. That means I can have seconds, right?
- The Well Seasoned Cook is also seasonal, with three recipes that can be put together into one fall-oriented dish: Sourdough Whole Wheat Waffles with Pumpkin Butter and Candied Walnuts. The name pretty much says it all for this one, but be sure to check out the pictures if you’re a breakfast food fan.
- Still on the breakfast food theme, there are some tasty Orange Ricotta Pancakes at everybody likes sandwiches. The recipe is heavy on the ricotta, with just enough flour and egg to bind the batter together, so the pancakes are satisfying but have an almost delicate, tender texture. Jam is a good accompaniment, although you can’t go wrong with classic maple syrup, either.
- Over at Fat Free Vegan Kitchen we have Vegan Magic Cookie Bars. The treat is a vegan remake of a classic (sometimes called a seven layer bar) is not fat free, with margarine (veg-friendly, of course), coconut, chocolate, graham crackers, and walnuts all packed into a candy bar-like cookie.
- I don’t know which part of Tartelette‘s Apple Beignets and Cheesecake Ice Cream I find more appealing: the beignets or the ice cream. The beignets in question are not the classic light donuts beignet fans are familiar with, but are apple slices dipped in beignet batter and fried until tender on the inside and crisp on the outside. The ice cream is a rich mixture with just enough cream cheese to impart a cheesecake flavor. It’s the kind of dessert that tastes like comfort food, but is sure to be a showstopper.
- Last but not least, if you’re looking for something non-baking, take a look at Chadzilla‘s method for making vodka pills – a.k.a. sweet candies with a liquid center, which just happens to be vodka in this case.
