Cow Tales are long, thin rolls of chewy caramel filled with a melt-in-your-mouth vanilla cream. The candy is made by Goetze and, as delicious as they are, they can be relatively difficult to find. Instead of hunting down a store that carries them or paying for shipping from an online candy vendor, you can do just what the cupcake queen did and make a batch of homemade Cow Tales. Her recipe starts with store-bought caramels and adds in half-and-half, butter and sugar to produce the chewy texture of the original candy, but uses marshmallows as a filling, where the original vanilla cream is more like a frosting.
Slight differences from the Goetze product aside, the finished Cow Tales looked and tasted great. She sliced them up and used them to top off some apple caramel cupcakes, which were (naturally) decorated with miniature cows.Â
