Baking Bites for Craftsy: Pancake Cups
Pancakes are one of my favorite breakfast foods and while I love classic buttermilk pancakes, I’m always looking for new ways to enjoy them. These Pancakes Cups – and you can get the recipe on the Craftsy blog (it’s free!) – are currently at the top of my “most fun way to eat pancakes” list. The pancake cups are like individual dutch babies that are baked in muffin cups. The pancakes start out with a relatively thin batter that puffs up impressively in the oven, creating a cup/bowl shaped pancake that you can eat in any number of ways. My favorite ways to serve them are filled with whipped cream and fresh fruit or simply with butter and maple syrup.

When serving these, you’ll probably want to allocate two per person. If you’re serving them as part of a much bigger brunch spread, you could get away with only one per person. On the other hand, if this is all you’re making for breakfast (a good choice in my book), you might find that everyone wants three.
