Marshmallow peeps are a treat that I always look forward to when Easter comes around. While the chick-shaped marshmallows are available nearly year-round these days, I still associate them with the spring and that is when I enjoy them the most. In addition to marshmallow chicks, you can make other chick-shaped goodies that will bring the spirit of spring into your kitchen. The Nordic Ware Chick Cake Pan bakes up a half-dozen chick-shaped cakelets that are just as cute as those marshmallow Peeps. The heavy duty cast aluminum pan has three slightly different chick designs that will give your cakes some personality. The cakes have a lot of detail, but the details are straightforward enough that they should transfer to any cake you bake with relative ease. The interiors of the cakelets are nonstick, but I still recommend greasing and flouring these pans before use to get the cleanest results. You can bake a spring-flavored cake – such as lemon or strawberry – in this pan, or opt for a quick bread recipe. The cavities are a little larger than your standard muffin, so most loaf pan-sized recipes should fit into the pan nicely.
