Peanut Butter and Honey Banana Pops

If you have bananas in your kitchen right now, you should seriously consider making a batch of these Peanut Butter and Honey Banana Pops right now. They may not sound too special when you first glance at the recipe, but they are surprisingly delicious for something that is so easy to put together. And I can almost guarantee that you will find yourself making them on a regular basis once you give them a try that first time.

The Peanut Butter and Honey Banana Pops are a variation on Crunchy Banana Pops that I’ve been making since I was a kid. I still like them just as much now as I did then. The pops start with a half of a ripe banana on a popsicle stick. They’re covered with peanut butter and honey, then rolled in crispy rice cereal and frozen. The bananas take on a wonderfully creamy, ice cream-like texture when they’re frozen and the salty-sweet peanut butter and honey coating is the perfect match for the fruit (I also like this combination on sandwiches!). The cereal just adds a little crunch and helps to hold everything together.

I find that the easiest way to put these pops together is with a little assembly line. I set up stations with bananas, peanut butter, honey and cereal along my countertop and make the one at a time, going straight down the row. You can start with room temperature bananas if you work quickly, but it is easier to pop the bananas into the freezer for an hour or so before starting, as that helps the toppings stay in one place as you put the pops together. I like to use Rice Krispies when making these pops, but a cereal like Cornflakes will work well if the flakes are lightly crushed before using them.

Banana Pop Assembly Line

The pops will need to freeze at least 2-4 hours before serving them to ensure that the bananas are completely frozen, but they can also be prepared a few days in advance and stored in the freezer until you’re ready to enjoy them.

Peanut Butter and Honey Banana Pops
2 large bananas
approx 1/2 cup creamy peanut butter
approx 1/2 cup honey
approx 2 cups puffed rice cereal, such as Rice Krispies
popsicle sticks

Peel bananas and cut them in half. Insert popsicle sticks into cut ends of the bananas. Place on wax paper and freeze until slightly chilled, about 1 hour.
Working with one at a time, spread 2-3 tbsp peanut butter over each banana half, coat with honey and roll in puffed rice cereal. Place the bananas on wax or parchment paper and return to the freezer. Repeat with remaining bananas. Freeze for at least 2 hours, or overnight.

    These were fun and yummy! DH wished it was nutella instead of peanut butter, and DD1 doesn’t like the “seeds” in bananas, so all the more for me and DD2!
