  • There are foods that celebrate St Patrick’s Day, and these Irish Potato Cookies from Bake at 350 are a great example. These little cookies actually look like potatoes – but don’t worry, there are no potatoes in the cookie dough. They are no-bake cookies made with cream cheese, pecans and plenty of confectioners’ sugar. The dough is easy to shape and once you have formed your potatoes, you can roll them in cinnamon and stud them with pieces of slivered almond to give them a realistic look.
  • Another no-bake recipe comes in the form of Lemon Coconut Bars from Butter Baking. These bar cookies couldn’t be any easier to make, and they pack a lot of flavor into each bite. The body of the bars comes from ground graham crackers (or other biscuits) and shredded coconut. They’re flavored with lemon and a pinch of salt, and a mixture of melted butter and sweetened condensed milk that has been cooked until it starts to caramelize holds everything together. This is a base you could easily put your own variations on by using flavors other than lemon, as well.
  • Unless you entertain a lot, there are many times when you want to make dessert but don’t need to serve a crowd. A recipe that is designed to deliver only a small serving is just the thing, and Beyond Frosting‘s Mocha Irish Cream Cupcakes for Two just might be the perfect treat for a small St Pat’s Day celebration. The espresso-spiked mocha cupcakes are filled with a rich Irish cream ganache and topped with a tower of Irish cream whipped cream. And you can always scale up the filling and frosting to make more cupcakes, since you might not want to stop at just two of these!
  • Shugary Sweet‘s Maple Toffee Cookies feature a winning combination of maple and toffee inside a soft, chewy cookie. The secret to getting a good toffee flavor is to chop up chocolate bars that are packed with toffee bits and use them in place of regular chocolate chips, then augment that with some chopped toffee bits. You’ll get a lot of toffee in every bite this way, and the sweet toffee works beautifully with the brown sugar and maple flavoring in the cookies.
