If you are getting a little tired of pumpkin pie, there are plenty of other pumpkin desserts to choose from for the fall baking season. I never really get tired of pumpkin pie myself, but I do love to have some options and this week’s roundup will give you plenty of inspiration.
- Baked by An Introvert‘s Pumpkin Oatmeal Cream Pies offer up a handy way to get your pumpkin fix. These sandwich cookies are made with pumpkin oatmeal cookies, which deliver a wonderfully spicy flavor, and are filled with caramel and marshmallow cream. The cookies keep well and are a good choice for snacking while you bake up the rest of your fall goodies.
- The Pumpkin Madeleines from Food Nouveau are an elegant way to get a pumpkin fix. The cake-like tea cookies are made with pumpkin puree and flavored with a combination of warm spices and maple sugar. Maple sugar is a fun ingredient to work with because it can be used just like regular sugar, but brings in a strong maple flavor. The combination of maple and pumpkin is always a winner in my book.
- If you’re looking for something a little different, Pumpkin n’ Spice‘s Pumpkin Snickerdoodle Cobbler might be right up your alley. The cobbler has a creamy pumpkin base that is very similar to the filling of a pumpkin pie. It is baked in a casserole dish and topped with cinnamon-kissed snickerdoodle cookie dough, which creates a buttery cookie crust over the filling. The cobbler is meant to be served warm, so don’t forget to pick up a pint or so of vanilla ice cream to serve it with.
- Unlike the other recipes on today’s list, the Elm Street Haunted House Cookies from Not Quite Nigella don’t use any pumpkin, though the cookies are flavored with spicy cinnamon and nutmeg.
