  • Rainbow desserts are everywhere – and with good reason, because the colorful desserts are sure to put a smile on your face before you even take a bite. The two doughs are baked together, resulting in a cookie that is not only colorful, but has a wonderful surprise inside when you take that first bite!
  • If you’re a pineapple fan, than Edible Woman‘s Pineapple Macadamia Crumb Pie is the dessert for you.The filling for this pie is made with fresh pnieapple, along with some sugar and a mint of cinnamon. While you may not have had a pineapple pie, the way that the fruit becomes so tender and sweet in the oven will instantly win you over. The filling is topped with a brown sugar, oat and macadamia nut crumb topping that adds a great crunch to every slice.
  • Lemons for Lulu prepared a Kentucky Derby-worthy dessert inspired by a classic springtime cocktail, the Mint Julep. This Mint Julep Poke Cake starts with a yellow cake mix (or your favorite yellow cake recipe). The cake is topped with a mixture of sweetened condensed milk and bourbon (and you can be generous with the bourbon, if you want a boozy cake), which is allowed to soak thoroughly into the cake in the refrigerator. Before serving, the cake is topped with a mint whipped cream. It may not look like a julep, but it captures the spirit of it and is an excellent choice for a derby party.

This Cafe Latte Ice Cream is an easy ice cream recipe that delivers a lot of coffee flavor. I used Starbucks Via, an instant coffee that has a very concentrated coffee flavor that translates well to the ice cream. Turn this into an affogato by serving a small scoop with a shot of espresso over the top to dress it up!
