The new Nordic Ware Jubilee Bundt Pan deserves its festive sounding name because this bundt cake is certainly ready to be the centerpiece of a party. The pan has a very unusual design that almost reminds be a honeycomb, with a pattern pf concave diamonds covering the entire cake. Compared to more traditional, curved bundt pan designs, this one has a very modern feel to it. Those diamonds aren’t just decorative, either. Glaze usually just runs down the side of a bundt cake and ends up on a pool at the base, but the pockets created by the diamond pattern of this pan will catch the glaze, giving each slice a little extra sweetness.
The pan is made of heavy duty cast aluminum and has a nonstick interior. There are lots of nooks and crannies for cake to get wedged into in a pan like this one, so even though it is nonstick, I recommend greasing and flouring the pan to ensure that you always get a clean release. For a pan like this one, a nonstick spray is a good way to get into all those corners, but you can also use melted butter or shortening and brush it in with a pastry brush to ensure you get an even coat and a beautiful finished cake.
