  • Biko is a Filipino coconut sticky rice cake that is not unlike a cupcake made out of sweet, brown sugar-flavored rice pudding. Cupcake Project actually made some Biko Cupcakes wit Mango Sorbet by making a big batch of coconut sticky rice, dividing it into silicone cupcake liners and baking the “cakes” until they were rich and caramelized around the edges. These rice cakes are gluten free and have a very simply ingredient list, but make for a flavorful and tropical dessert – especially if you opt to top yours with mango sorbet, too.
  • Sweet strawberries and sweet-tart rhubarb make a classic flavor combination, in addition to adding a beautiful splash of red to any dessert they’re included in. Sophistimom‘s Strawberry Rhubarb Pavolva has a more brilliant color to it than you usually see with this combination of ingredients and the secret is beets. Just one small beet in the rhubarb poaching liquid really amplifies the red in the strawberry rhubarb compote that tops this marshmallowy pavlova. .
  • When you think of granola bars, you probably picture something healthy that is full of nuts and oats – not something that is full of chocolate. But chocolate in a granola bar can be a very good thing, as you can see in All Day I Dream About Food‘s Triple Chocolate Granola Bars. These chocolate bars have a chocolate oatmeal base, chocolate chips and are topped off with white chocolate drizzle, which makes them a little more dessert-like than your average granola bar and a good choice for chocolate lovers.   • Spice cookies and cakes are often associated with the holiday baking season, where the spices can help to take the chill off just as much as a mug of cocoa. Spices are certainly in season year round, and if you’re in the mood for a spicy, soft, satisfying cookie there is no need to wait until December to bake one. All you really need to do is bake a batch of Belgian Spice Cookies, like Espresso and Cream did. The cookies are made with part whole wheat flour and are spiced with ginger, cloves, cinnamon and brown sugar.
  • The Lemon Party Macarons that 6 Bittersweets recently baked are probably the cutest macarons you’ll ever see. These bite sized cookies are not only flavored with lemon, but they look like tiny lemons, as well. The macarons have the same a chewy, almond meringues that are the base of most macarons and are scented with a bit of lemon zest. They are filled with a Tart White Chocolate Lemon Ganache that packs a lot of lemon flavor and adds a nice richness to the cookies. The method for making the meringues into miniature lemons takes a little bit of practice, but the impressive little treats are worth the effort.
