What is wondra flour?

wondra flourWondra flour is an ingredient sometimes called for in baking recipes, mostly in some pie crust and tart crust recipes that promise a flaky and tender crust. It is actually a brand name for a type of instant flour and, because the brand is so widespread, the name Wondra tends to be used in recipes.

Instant flour is low protein, finely ground flour that has been treated so that it will dissolve instantly in water and not require the same long cooking process as non-instant flour to dissolve in a liquid and thicken it. The process is called pregelatinization, and it involve heat a starch (flour) with very hot water and/or steam, then drying it out, so that it has essentially been cooked already. Because of this, instant flour also very unlikely to form lumps when mixed with a water or other solution. Wondra also has some malted barley flour mixed into it, which acts as a dough conditioner in many breads.

While all purpose flour, pastry flour and cake flour can all be substituted for each other reasonably well when you make a few adjustments to the amounts you need, you cannot really work out a similar substitution for instant flour. Cake flour, with its low protein content, will be the closest you can get, but unless only a very small amount is called for in your recipe, it is worth either (a) trying to find some Wondra or (b) trying to find a different recipe.

    I use Wondra for rolling out piecrusts. I still hate rolling out piecrusts (my sister got that gene), but the Wondra makes a big difference.

    Does anyone know if Wondra is like “00” flour, called for in some pizza crust recipes? I cannot find it anywhere and would love to try it in pizza crust. Thanks!

    You know what else Wondra is great for? Dredge some thick slices of bacon in it, sprinkle with brown sugar and bake at 350 for about 20 minutes. zomg.

    Wondra Pie Crust
    See the wonders of Wondra with this tender, flaky crust.

    I N G R E D I E N T S
    4 cup Wondra flour
    2 cup Crisco vegetable shortening
    1 Tbsp. salt
    1 egg
    1 tsp. cider vinegar

    I N S T R U C T I O N S
    Blend together, the flour, Crisco and salt with a pastry cutter. Using a 1 cup measuring cup, whip the egg and vinegar together, adding enough milk to make 1 cup of liquid. Add to the dry ingredients.

    Heat oven to 425 degrees. Bake for 10 to 12 minutes or until golden brown. (Extra crust may be frozen for up to 3 months).

    *For best results use Wondra flour when rolling crust out too.

    Wondra is a wonderful product for making gravy. I cannot find the product “Wondra”. Wegmans in Rochester, NY use to sell Wondra but do not anymore and I can’t find Wondra anywhere.

    Where can I purchase Wondra flour?? I can get the gravy/sauces package, but not the 2# box of all purpose flour…Wondra is the BEST!!!! I have used it for many, many years and have my daughter-in-laws using the one for grave and they love it..

    Karen, yes this is flour you need for certain pizza crust recipes. It gives it a nice flaky, pastry type crust.

    I LOVE Wondra!!! My only issue now is…….I have to eat gluten free 🙁 Is there a DRY substitute for Wondra? I like to make my own gravy mixes and they use Wondra. I was given this for a wet substitute: 1/2 cup milk and 1 tsp. cornstarch. Please help?! Thank you!!
