While plenty of people will name chocolate or vanilla as their favorite flavors, lemon is a flavor that seems to appeal to both sides of the fence every time. I love a good, easy lemon loaf cake because of that very appeal: every time you bake one, you know it will go quickly. Over on the Craftsy blog (it’s free!!!), I’m sharing a recipe for a One Bowl Lemon Loaf Cake that is bursting with zesty citrus flavor.Â The loaf uses lemon juice and lemon zest in the batter, and it is topped with a lemon glaze. It can be made from start to finish in about an hour – and who does’t love a one-bowl recipe that requires minimal cleanup? This recipe can also be adapted for other citrus fruits. I highly recommend a blend of both lemon and lime if you’re a citrus lover, as that is a delicious twist on this lemon-only recipe. You can also include up to 3/4 cup of your favorite mix-in. Shredded coconut and toasted walnuts are both a good match for lemon, as are white chocolate chips. That said, it’s pretty much perfect as-is and you can’t go wrong with the basic loaf cake, either.
