I am a big fan of everything and anything s’mores, from breakfast to dessert, and I’m always looking for new ways to enjoy the combination of graham crackers, chocolate and marshmallows. While I was shopping at my local supermarket the other day, I spotted a box of Honey Maid S’mores Cereal that sounded right up my alley. The cereal is made with crisp graham cracker squares, chocolate cereal puffs and marshmallows. Pour some milk on a bowl full of the cereal and you have a breakfast-friendly s’mores treat, but I decided to turn the cereal into a batch of S’mores Cereal Bars.

The cereal bars follow along the same recipe that your classic Rice Krispy treats do: melting together butter and marshmallows, then stirring in cereal. It’s easy to make in a large microwave-safe bowl or in a saucepan on the stovetop. I added a pinch of salt, due to the fact that the cereal is already a bit sweeter than your average puffed rice cereal.

The s’mores cereal has a great graham cracker flavor and that really comes through in the finished bars. The chocolate flavor is more subtle, but chocolate tends to be the dominant flavor in many s’mores creations and I liked that the graham was the strongest element in these. That said, the marshmallow is actually the standout in these bars, since it coats every piece of cereal evenly. Surprisingly, since the marshmallows in the cereal are freeze-dried, they don’t melt into the butter-marshmallow mixture, but hold their shape and still deliver extra pops of marshmallow as you are munching your way through the bars.

It’s a little more traditional to make cereal bars like these in a 9×13-inch rectangular pan, instead of packing them into a square baking dish. I prefer the slightly taller cereal bars, so I almost always choose to use a slightly smaller pan. If you only have a 9×13-inch pan available, feel free to use that to make bars that are just as tasty, but slightly thinner than these. These are at their best within a day or two of making, so cut them into large pieces and enjoy!

Honey Maid S’mores Cereal Bars
3 tbsp butter, melted
10-oz marshmallows
pinch salt
7 cups Honey Maid S’mores Cereal

Lightly grease a 9×9-inch baking dish.
Toss marshmallows with melted butter in a large, microwave-safe bowl. Microwave on high for 60-90 seconds, until marshmallows have melted. Stir the marshmallow mixture, then add in the salt and cereal. Stir with a large spatula until everything is evenly combined.
Pour into prepared pan and spread into an even layer. Allow bars to cool to room temperature before slicing.

Makes about 9-12 cereal bars.
