While I do pick up the odd cake mix from time to time, I rarely pick up a mix for cookies because it doesn’t seem like the mixes will save much time over a from-scratch recipe. One of the reasons that the Betty Crocker Chewy Oat Bars Mix caught my eye when I was at the grocery store the other day was the fact that it did seem a bit easier than your average cookie mix. The packaging promised chewy oatmeal cookie bars studded with white chocolate chips and shredded coconut. As these are all flavors that I like a lot, I picked up a package to give it a try.

The mix is easy to make. Softened butter and water are stirred into the base using a fork to sort of cut them in. The butter can be softened in a microwave or simply left on the counter, depending on how much advance planning you want to do. The mix is packed into a baking pan – I used an 8×8 – and baked until golden brown. The mixing process was extremely simple, so these went into the oven quickly. I did find that mine needed a little bit longer in the oven to look done (not wet in the center), so I added about 5 minutes to the overall baking time.

The finished bars were delicious and really exceeded my expectations. They are somewhere between a granola bar and a blondie, with a chewy center, crisp edges and a slightly crumbly texture. I didn’t get a lot of coconut flavor, but the nuttiness of the oatmeal is excellent and I enjoyed the white chocolate chips studding the bars. I cut mine into fairly generous pieces to make the a more satisfying snack, though any size will work. Overall, a very good mix that I would actually make again. They’re easy, fast and very tasty – and you can’t ask for more than that from a mix!
