Triple Chocolate Chip Coconut Oatmeal Cookies

I often have a handful of chocolate chips left at the bottom of the bag after baking. Sometimes I’m only making a half batch of a recipe, other times the recipe I’m making simply doesn’t call for a whole 10-, 12- or 16-oz of chocolate chips. Rather than keeping a half dozen partially-empty bags in my pantry, I combine the chips into one big bag or container. Sometimes I combine them with like-chips, but other times I simply mix them together to create a variety pack. This might have been the inspiration between Nestle’s Triple Chip mix, in fact. You can use a mix of chips in any recipe that calls for regular chocolate chips, adding a little more diversity to an otherwise plain batch of cookies.

In these cookies, I’ve used white, dark and milk chocolate chips. The white chips add a creamy vanilla sweetness that goes nicely with the butter and vanilla in the cookie dough. The milk chocolate chips taste like creamy milk chocolate. The dark chocolate chips add a strong, bittersweet chocolate flavor and they’re intense enough to counter the additional sweetness of the milk chocolate, letting the cookies taste chocolaty without being overly sweet.

Since I was playing with my mix-ins already, I decided to add even more by including oatmeal in the mix. I added just enough to give the cookies a subtle nutty texture. The result was a batch of cookies that had a little something for everyone! They were chewy, with a slightly crisp outer edge. There was plenty of chocolate and the variety of chips meant that not every bite tasted exactly the same. I would open three bags of chocolate chips just to make these, but fortunately, I didn’t have to!! These are a great way to use up leftover chips to make some deliciously different cookies.

Triple Chocolate Chip Oatmeal Cookies
2 cups all purpose flour
1 tsp baking soda
1 tsp salt
1 cup butter, room temperature
1 cup sugar
1/2 cup brown sugar
1 large egg
1 tsp vanilla extract
1 cup oatmeal (regular or quick cooking)
2 cups mixed chocolate chips (equal parts white, milk and dark/semisweet chocolate)

Preheat oven to 350F. Line a baking sheet with parchment paper.
In a medium bowl, whisk together flour, baking soda and salt.
In a large bowl, cream together the butter and sugars until light and cream. Beat in egg and vanilla extract. Blend in the flour mixture and the oatmeal, then stir in the chocolate chips until they are well-distributed in the dough.
Shape dough into 1-inch balls and arrange on prepared baking sheet.
Bake for 10-12 minutes, until cookies are set and lightly browned on the edges.

Makes about 3 1/2 dozen cookies.
