Gingerbread men and women are classic holiday cookies that are both fun to make and fun to eat. I make a few batches every year, using both traditional gingerbread cookie doughs and sugar cookie doughs. Both of those recipes are made with regular wheat flour, which means that they’re not suitable for cookie-lovers that have dietary restrictions around wheat. This cookie dough is made with a gluten free all purpose flour blend and is loaded with warm gingerbread spices. The dough is not overly sweet so, while you can absolutely eat the cookies on their own, you can also decorating them with as much frosting as you might want.
