Peanut Butter Butterfinger Chunk Bars
Peanut butter cookies always remind me of childhood, largely because I think that I ate way more peanut butter cookies as a kid than I do these days. Fortunately, it doesn’t take long to bake up a batch to satisfy my desire for a little nostalgia – or to pour a glass of milk to go with them!! These Peanut Butter Butterfinger Chunk Bars pack in a lot of peanut butter and also incorporate another peanut butter-infused snack: Butterfinger cups. These mini candys are similar to to other peanut butter cups, but have both creamy peanut butter and crispy Butterfinger bits inside of a milk chocolate shell. I’ve seen them in the baking aisle, along with other mini candy bars, where they are just asking to be stirred into your next batch of bars.

The bars are thick, chewy and pack a lot of peanut butter into every bite. The Butterfinger cups are slightly bigger than a regular chocolate chip and you get a nice distribution of them within the bars. I added chocolate chips to the mix to bring in a little more chocolate flavor, but you could easily use all peanut butter cups if you prefer. The Butterfingers cups bring in some delicious extra peanut butter flavor. Unlike peanut butter chips – which are an easy-to-use mix-in that is another way to amp up the peanut butter flavor – the cups are less sweet and much creamier. Since the filling of the cups is slightly firm before baking, the cups are easy to stir in and don’t get crushed by the thick batter as they are incorporated.

If you like your peanut butter goodies with a little more nuttiness, feel free to use crunchy peanut butter instead of the creamy peanut butter that I used. You can also stir in a tablespoon or two of finely chopped peanuts to get a similar effect. The bars will keep very well in an airtight container for a few days after baking.

Peanut Butter Butterfinger Chunk Bars
1 1/2 cups all purpose flours
1/2 tsp baking soda
1/4 tsp salt
1/2 cup butter, room temperature
1/2 cup sugar
3/4 cup brown sugar
3/4 cup smooth peanut butter (national brand)
1 large egg
1 tsp vanilla extract
1 cup Butterfinger cups
1/3 cup chocolate chips

Preheat oven to 350F.
Line a 9-inch square baking pan with aluminum foil, lightly greased, or parchment paper.
In a medium bowl, whisk together flour, baking soda and salt.
In a large bowl, cream together butter and sugars until light and creamy. Add in peanut butter, egg and vanilla extract and blend until well-combined. Stir in flour mixture, followed by Butterfingers and chocolate chips.
Bake for about 35 minutes, until bars are golden brown around the edges and set in the center. Allow bars to cool completely before removing from the pan and slicing.

Makes 20 bars.
