It is hard to beat an ice cream sandwich when you want a cool treat on a hot day. They’re more satisfying to eat than a popsicle, but they still give you the cool feeling that you’re looking for when the temperature spikes upwards. I typically make my own ice cream sandwiches at home, rather than buying them. I’ll bake up a batch of cookies and assemble the sandwiches with whatever flavor of ice cream I have on hand. Then, I’ll individually wrap the sandwiches and pop them in the freezer so that they are ready to eat whenever I’m in the mood.

The sandwiches are made with thin, chewy chocolate chip cookies and are stuffed with chocolate chip cookie dough ice cream. The thin, chewy cookies are perfect for ice cream sandwiches, because they don’t get too hard when they are frozen and you can still bite through them. The chunks of cookie dough add extra chocolate chip cookie flavor to every bite. They’re addictive, believe me, and you should definitely stock your freezer full of them this weekend!
