I don’t remember whose birthday it was, as it was many years ago, but I do remember the first time I was served a cupcake cone. Cupcake cones are cupcakes that are baked in ice cream cones, which have a neat combination of flavors and textures, as well as many fun decorating possibilities. The cupcakes are usually made using plain “cake” cones, which have flat bottoms, but you can use any kind of ice cream cone – including sugar cones and waffle cones – if you can figure out how to make them stand up in the oven. If you’re a cupcake cone fan, the Wilton Cupcake Cone Baking Rack is one tool that will make your baking a whole lot easier. This nifty rack is designed to hold a dozen cones upright during baking.
To use it, simply place your cones in the rings, making sure that they are as straight as possible. Using a measuring cup or a piping bag, fill each about halfway full of batter. Don’t overfill the cones, or the batter will spill out onto the baking sheet below the rack. Then, simply slide the cones into the oven and bake until they’re set and firm to the touch. The finished cones can be decorated with big swirls of frosting and topped with chopped nuts and sprinkles – just like “real” ice cream cones!
When you’re not baking, you could use the rack to hold up other things, as well. Snow cones are just one example that springs to mind, but anything from napkins to flowers could be propped up in the rack. The rack also folds flat for storage, so it won’t take up much space even if you’re only using it for batches of cupcakes.
