Low Fat Double Chocolate Oatmeal Cookies

The next time that you need a little chocolate fix, I recommend giving these Low Fat Double Chocolate Oatmeal Cookies a try. They are a great everyday sort of cookie, and I mean that in the best way possible. They don’t require any special ingredients or any special prep work. In fact, you can have the batch ready to bake in just a couple of minutes. In addition to the easy prep, they are relatively low in fat and loaded with plenty of chocolate flavor!

To make the cookies lower in fat, they are made with applesauce, in addition to butter. The butter is important to maintain the texture of the cookies, while the applesauce adds additional moisture and keeps them chewy in spite of the lower fat content. You can’t taste the applesauce in the finished cookies. The cookies have a deep, brownie-like chocolate flavor, both from the cocoa powder in the cookie dough and the generous amount of chocolate chips that are stirred in. The chocolate chips, of course, are not low in fat – but when it comes to quality chocolate, that is where I refuse to compromise on flavor, texture or fat content!

Chocolate oatmeal cookies aren’t always the best looking cookies, since oatmeal doesn’t really absorb the color from the cocoa powder in the cookie dough. In light of this, I recommend using only quick cooking oatmeal in this recipe, so that your cookies will both look and taste delicious. If you don’t have quick cooking oatmeal, you can coarsely chop regular rolled oats in the food processor to give them a finer consistency.

You need to take care not to overbake these cookies, as they will dry out if they spend a few extra minutes in the oven. Even if you over bake them slightly, the cookies will still taste good on the day they are baked, but their shelf-life will be shortened a little bit. Perfectly baked, the cookies will keep well in an airtight container for a couple of days after baking and you can even freeze them for longer storage, if you don’t think you can eat your way through two dozen cookies in a few days.

Low Fat Double Chocolate Oatmeal Cookies
1 cup all purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 1/2 tbsp butter, room temperature
1/2 cup white sugar
1/2 cup brown sugar
1 large egg
1/4 cup plain, unsweetened apple sauce
2 tbsp unsweetened cocoa powder
1/2 tsp vanilla extract
2 cups quick cooking oats
1 cup chocolate chips

Preheat oven to 350F and line a baking sheet with parchment paper.
In a medium bowl, whisk together flour, baking powder, baking soda, salt.
In a large bowl, cream together the butter and the sugars until mixture is very sandy. Beat in the egg, followed by the applesauce, cocoa powder and vanilla extract. Mix until cocoa powder is completely incorporated. Stir in the flour mixture, followed by the oats and chocolate chips.
Shape the dough into 1-inch balls and arrange onto the prepared baking sheet, allowing about 2 inches between the cookies so that they can spread. Flatten each cookie slightly to ensure even baking.
Bake for about 9-12 minutes, until the cookies are a bit firm on the edges and do not appear to be wet in the center. Let cool on sheet for 2-3 minutes, then transfer to a wire rack to cool completely.
Store in an airtight container.

Makes about 2 dozen cookies.

    I tried out the recipe and it was a great success. I didn’t have apple sauce and so I used golden syrup.
