Pumpkin pie is always a welcome choice of dessert for Thanksgiving, but there are times when you want a pumpkin dessert besides pumpkin pie at your holiday table. My suggestion? Try baking up a Pumpkin Pecan Bread Pudding instead of that pumpkin pie. This bread pudding is rich and moist, made with a pumpkin custard base that is loaded with plenty of pumpkin pie spices. The pudding is tender, but I included a generous number of coarsely chopped pecans to give it some texture. I typically recommend using roasted and salted pecans, however if you happen to have spiced pecans available, they will add a really addictive savory element to this dessert. It is easy to whip up, but can also be baked a day in advance if you want to keep your oven clear for roasting that turkey.
