  • Berry season is winding down, which means that you should make good use of fresh berries while they are still at their peak. Chew Out Loud baked up a Fresh Blueberry Pie that is bursting with berry flavor. The filling is made primarily with fresh blueberries, but a grated apple is added to help give the filling some extra body. It also has a squeeze of lemon and a bit of cinnamon to brighten up those berries, and just the right amount of sugar. The filling is wrapped up between two layers of all-butter pie crust, which not only bring a perfectly crisp and flaky element to each bite of pie, but add a lot of rich flavor to those tangy berries.
  • It’s always nice to find a surprise inside of a baked good, whether it is a cream filling in a cupcake or a pocket of chocolate in a cookie. Cookie Madness recently developed a Fruit and Cream Tunnel Cake that has just such a surprise inside. The cake is an easy to make sour cream cake that is loaded up with fresh fruit. You can use blueberries, raspberries, diced peaches or most other summer fruits. A small batch of pastry cream is prepared and spooned into the pan, surrounded by cake batter. Pastry cream isn’t usually baked direction into a cake, and the result is a fruity, tender cake with a creamy, custardy center. It’s like two desserts in one!
  • National S’mores Day was a few days ago and I celebrated by whipping up a few s’mores in my yard. The Food Charlatan celebrated with some Peanut Butter S’mores Bars. These bar cookies have two layers of peanut butter cookie and graham cracker dough surrounding a filling of peanut butter, chocolate and marshmallow creme. They are a bit messy to eat, but every sticky finger is worth it because the bars deliver a perfect combination of sweet, salty indulgence in every bite. You might want to bake a double batch, since these should go very quickly.
  • Peaches are at their peak late in the summer and I’ve been eating a lot of them, both uncooked, baked into desserts and churned into ice cream.
  • Tutti Dolce‘s Peach and Honey Scones are a simple treat that you can make when you just have one or two peaches in your kitchen that you want to put to good use. The buttermilk scones are packed with peaches and are lightly sweetened with a blend of brown sugar and honey. They are finished with a confectioner’s sugar glaze that also uses honey, to ensure that its sweet flavor comes through in each bite, along with a pinch of cinnamon. The dough comes together quickly so that you can have these on a weekday or weekend morning.
