  • Waffles are a great way to kick start the weekend, especially if you take a cue from Sift and Whisk and make a batch of Bananas Foster Waffles. These tender belgian-style waffles are delicious on their own, but what makes them stand out is their rich bananas foster topping. It is made with butter, brown sugar, cinnamon and rum – and includes a splash of banana liqueur to further emphasize the flavor in the bananas that are cooked in that caramel sauce. It’s perfect for an indulgent brunch.
  • Another tasty waffle recipe comes in the form of Whole Wheat Carrot Cake Waffles from Baking a Moment. The waffles are a surprisingly healthy twist on carrot cake. They flavorful waffles are made with whole grain flour, low fat milk, greek yogurt and lots of spices. They’re also loaded with chopped nuts, shredded carrots and diced pineapple. The waffles are topped with a rather decadent cream cheese whipped cream in a nod to the cream cheese frosting that is usually found on top of carrot cake.
  • On Sugar Mountain‘s Stuffed S’mores Muffins could be served for dessert just as easily as they could be served for breakfast. They’re inspired by the ever-popular campfire treat and pack all the flavors of traditional s’mores into this unusual package. The recipe starts with chocolate muffins that are baked on top of a graham cracker crust. They’re studded with chocolate chips to ensure you get plenty of chocolate in each bite. They’re filled with marshmallow fluff and topped with a graham cracker crumble so that you get the same sandwich of flavors as you do in the campside version, and can easily be served warm if you want to feel like you just toasted them over the fire.
  • When the weather is warm, a light and creamy pie can be a dessert that is both satisfying and refreshing. Glazed and Confused whipped up a Lemon Poppyseed Icebox Pie during an early spring heatwave and it is well-worth bookmarking even if the weather in your area hasn’t warmed up quite yet. The filling is loaded with fresh lemon juice and zest, and is lightened with enough whipped cream to give it a mousse-like lightness and keep it from seeming too dense. The poppy seeds add a pop of color and a hint of texture to the filling. It is topped with a generous layer of whipped cream to cut the sweet-tart lemon – and to give the finished pie a lovely look. The filling sits in a graham cracker and Biscoff crust that adds just the right amount of crunch to the creamy filling.
  • Although malted milk ball candies like Maltesers and Whoppers are available year round, I find that they are even more popular around Easter, and that is the season that I tend to eat the most of them. Jezzka came up with a creative way to make Homemade Chuckles (a.k.a. Maltesers/Whoppers), using a crunchy malted milk meringue for the center of the chocolate. It’s not exactly how the big candy companies make their versions, but this one captures all the same flavors and textures that you’ll find in the packaged variety. Milk chocolate is a classic coating for this type of candy, but with a homemade version, you can also choose to coat yours in dark or white chocolate to suit your own tastes.
