Halloween is about tricks and treats, although the tricks usually only manifest themselves as scary costumes and people play up the sweets. I still like to get in a little trick once in a while and I do that in the form of filled cupcakes and other treats. These sweets have a surprise inside that really makes them stand out from other Halloween goodies. They not only taste delicious, but they’re a lot of fun to make and eat.
Bloody Brain Cupcakes are bright pink cupcakes with squiggly brains for frosting. They’re creepy to look at, but will definitely surprise anyone who picks one up as a treat because they’re filled with a tart cranberry sauce that makes for a spooky soft center to these “brains.”
Slime-Filled Cupcakes from the Black Lagoon are inspired by old-school monster movies. They’re filled with a bright green lime curd that tastes delicious, but looks a little bit like radioactive ooze. It’s a great flavor combination and the color gets points for the “gross” factor when they’re served at a party.
Vampire Cupcakes are a classic that I’ve been making for years and never get tired of. They’re vanilla cupcakes with a cherry “blood” filling that oozes out when you take a bite. They’re great for Halloween and can be served year-round to vampire fans. There is even a video tutorial that will walk you through the process of making them.
Vampire Cookies come in a much smaller package, but still deliver the same “blood” filling that the Vampire Cupcakes do. In this case, the filling is made from raspberry jam that is sandwiched between two thin layers of cookie dough. The cookie dough needs to be thin to give you the best filling-to-cookie ratio, but a little bit of patience when assembling them will lead to some amazing cookies.
Vampire Pancakes take the theme a step further so that you can start your Halloween celebrations at breakfast. The easy-to-make pancakes have a bright red filling that means you really don’t need to serve these with syrup – and you’ll get good results whether you start with homemade pancake batter or use a pancake mix.
Halloween Candy Lava aren’t as spooky as some of the other treats on this list, but they are a fantastic and unexpected way to use up leftover Halloween candies and transform them into something completely different. You can use almost any type of chocolate candy for these little cakes, but I like to use mini candy bars that have a caramel filling the best.
