You can make ice cream sandwiches at home with any two cookies and any kind of ice cream. These homemade ice cream sandwiches are always tasty, but they don’t have the same kind of appeal as those rectangular ice cream sandwiches that come in paper wrappers that you can find at ice cream trucks (and that so many of us ate as kids). Those rectangular sandwiches may not have been made with premium ice cream, but they set the standard for ice cream sandwiches with their look. Wilton’s Ice Cream Sandwich Pan allows you to easily recreate those classic cookies at home for rectangular ice cream sandwiches that you can make easily and completely from scratch.

The nonstick pan bakes rectangular cookies for six ice cream sandwiches (12 cookies) per batch. Each cavity is about 1/4-inch deep and has a waffle pattern that decorates each cookie as it bakes. The pan comes with two recipes for ice cream sandwich cookie bases, though you can use it with other brownie and cookie recipes if you want to do a little experimenting. You can even pour a little bit of cake batter into the pan for a softer ice cream sandwich. Regardless of the recipe you use, the cavities should not be filled all the way to the top if you don’t want your cookies to be too thick. The cookies release well and, as soon as they have cooled, they are ready to become ice cream sandwiches with the ice cream of your choice.

  1. You know, I’ve never been a huge fan of ice cream sandwiches but this picture might have me re-thinking this. Vanilla cookies with strawberry ice cream might be right up my alley. :)
