  • You don’t have to do much to fresh strawberries to turn them into a delicious dessert. Baking Monster kept it simple with a Strawberry Compote Panna Cotta. This dessert has a light, creamy panna cotta as a base and is topped off with gently cooked, sweetened strawberries. The little bit of sugar makes the flavor of the berries stand out even more against the custard, and cooking them makes them tender enough – like the panna cotta – to eat with a spoon.
  • Salted caramel is addictive on its own, but combine it with chocolate and you’re looking at a potentially irresistible combination. Grin and Bake It made Salted Caramel Chocolate Cupcakes that have a rich chocolate cupcake base and are topped off with loads of salted caramel buttercream. The frosting starts with a homemade caramel sauce that makes it rich and flavorful. Put a sprinkle of coarse salt on top of these before serving.
  • Cinnamon rolls are a little bit time intensive for breakfast most of the time, but the Cinnamon Swirl Pancakes made by Naturally Ella are an easy stand in that have cinnamon roll flavor without the effort. The pancakes are made by swirling two batters – a plain pancake batter and a cinnamon one – together and drizzling them with icing that you might find on top of a cinnamon roll. These would also be good topped with a cream cheese drizzle, which you could make by adding a few tablespoons of softened cream cheese to the glaze.
  • If you like onion, there is no way that you could resist trying the Caramelized Onion Tart that Annie’s Eats tried this week. The tart is easy to put together, with a base of puff pastry topped off with thyme-spiked caramelized onions, a little ricotta and a little parmesan. It’s simple, but the flavors are complex. This is the perfect thing to serve with a big salad and a glass of wine for a simple summer meal that doesn’t involve grilling.
  • Guava paste is a sweet, candy-like ingredient made with guava that shows up a lot in cuban desserts. It also shows up in the Guava Butter Crumb Bars on At The Baker’s Bench. These crumble bars use the same buttery, oat and coconut mixture for the base and the topping and are spread generously with guava paste in between. That makes the flavorful and a great change from bars that just use jam or berries, and gives them a more tropical and more unusual flavor!

    Thanks a bunch Nicole for featuring the cupcakes on your weekly “bites” post. Love your idea to added a little bit of coarse salt on top. Now, I have an excuse to make them again 🙂
