Acorn Cakelet Pan

Acorns are not plentiful in my neck of the woods. There is a walnut tree near my year, so around this time of year I notice an upsurge in the number of squirrels attempting to bury things in my yard, however. I picture this pan as being a kind of  homage to nut-gathering animals everywhere. The Acorn Cakelet Pan makes 18 mini muffin-sized cakes shaped like acorns, with tops, stems and all. The detail put into these pans is impressive, and its nice to see that they included design beyond the simple shape of the nut. The pan can be used with any recipe you might ordinarily use to make muffins or cupcakes, so it works well for both savory cornbread and sweet cakes. If you can find it, try substituting a small amount of acorn flour for part of the all purpose flour in a favorite muffin recipe, since a recipe that uses the nuts would capture both the look and the spirit of the pan.

    Marianna- I’m in the same mess! My DH threw out the packaging w/recipe! I’ve have this pan and I make pumpkin acorns and cornbread acorns. Was really hoping to make the spiced sweet bread recipe this came with. Always a big hit.

    Maple Acorn Cakelets:
    1 1/3 cups flour, 1/2 tsp baking powder, 1/2 tsp salt, 1/2 tsp cinnamon, 1/4 tsp nutmeg, 1/3 cup milk, 1/4 cup maple syrup, 1 tsp vanilla, 1/4 tsp maple flavoring, 1/2 cup butter, 1/2 cup brown sugar, 2 eggs

    In small bowl, stir together flour, baking powder, salt, cinnamon & nutmeg, set aside. In liquid measuring cup -stir together milk, maple syrup, vanilla & maple flavoring – set aside. In med. bowl beat butter & brown sugar on med. sped until light & fluffy. Beat in eggs, scaping bowl often. Reduce speed and blend in flour mixture, alternating with milk mixture until all ingredients are together. spoon 1 TBSP batter into each well in pant. Bake 350 10-12 mintues. cool 10 mins in pan before removing.
