Strawberry Sunrise Scones

These scones weren’t winners in any Pillsbury Bake-Off competition, but still have a tie-in to the contest (like my other recipes this week). They were made with a recipe that I was working on for that last Pillsbury Bake Off competition, the one that Anna won. Although I met the criteria for ingredients, it may not have been “original” enough to become a finalist recipe. Did you know that they compare entered recipes to a huge library of recipes that have been entered in the past to check for originality?

While this may not be a winning recipe, it’s still a very good one. The scones are perfect for spring with the bright flavors of strawberries and orange. The scones are a bit more moist than what I’ll call a “traditional”, plain scone thanks to the addition of yogurt. They also keep a bit better than some other scones, making them ideal for serving at a large brunch or party when you can’t eat then right out of the oven.

Since I was trying to use contest-approved ingredients when I wrote the recipe, I originally used both frozen strawberries and orange-flavored yogurt. Plain and vanilla yogurt are in my fridge much more often than orange is, and a good – possible better – substitution is to use either plain or vanilla yogurt with some fresh orange zest mixed in to it. This will give the orange flavor a bit of a boost and should make the scones much brighter than the orange-flavored yogurt did.

If you can find fresh strawberries – they’re in season right now – you can easily chop some up and use those in the scones. If not, frozen strawberries will work well. They don’t need to be thawed before using, as long as you are able to give them a quick chop with a sharp knife before stirring them in.

Strawberry Sunrise Scones
Scones
2 cups all purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/4 cup sugar
1/3 cup butter, cold
6-oz (1 container) orange-flavored yogurt*
1 cup strawberries, fresh or frozen

Drizzle
1 cup confectioners’ sugar
2 tbsp [fresh] orange juice

Preheat oven to 400F. Line a baking sheet with parchment paper.
Combine flour, baking powder, baking soda, salt and sugar in a food processor. Pulse for 5 seconds to combine.
Cut butter into 4 or 5 pieces and add to food processor with flour mixture. Process for 10-15 seconds until no large pieces of butter remain.
Add yogurt and frozen strawberries to food processor. Pulse for 10-15 seconds until mixture comes together into a ball.
Divide dough in half and shape into two balls. Place the balls on the baking sheet and press down until dough is 1-1½ inches thick. With a knife, cut a cross into the dough so that each disk is divided into 4 pieces.
Bake for 18-20 minutes, until scones are lightly browned. Let the scones cool on the sheet for 5-10 minutes. Divide the scones along the lines you cut before baking and remove to a wire rack to cool.

While scones cool, prepare the glaze. Combine powdered sugar and orange juice in a small bowl. Stir until smooth. When scones are cool enough to touch (it’s ok if they’re still a little warm, especially if you still want to serve them warm), drizzle glaze onto scones with a fork.

Makes 8 scones.

*I opted for orange flavored yogurt as a qualifying ingredient for the bake off. Alternatively, use plain or vanilla yogurt with 2 tsp orange zest added to it.

    I’ve never made scones with fresh (or fresh frozen) strawberries b/c I’m afraid they would add too much water. But yours turned out great! Definitely like the fresh zest.

    I tried making strawberry scones once, but wasn’t too pleased with the result – the berries were too watery and the scones were not nicely golden.
    Yours, on the other hand, look flawless!

    I made these scones this morning, and was once again taught the lesson that even mistakes can be delicious … I do believe frozen strawberries would work better than fresh, as my food processor pulverized the fresh beauties into the then very very moist batter. Regardless, using orange zest was delicious and I only baked them for 15 minutes for what was the lightest little breakfast treat I’ve had in a while! Thank you for the recipe!

    I’ve made three batches of these scones so far. The first batch used fresh strawberries, and while they were good the strawberry flavour really didn’t carry through. The second batch replaced the strawberries with dried cranberry and the orange yogurt/juice with lemon. Very tasty! The last version added 1/2c white chocolate. Mmmmmm…..

    I hadn’t realized just how easy tasty scones were to bake – thanks muchly for this recipe! 😀

    I included your lovely scones in a round-up I wrote for Foodie View. I also made them last week, but since I didn’t have orange yogurt, I substituted apricot yogurt and added some orange zest. They were so moist and sweet. Just the way I like them.

    I found this website on the day you posted this recipe, and i immediately went home and baked them! I found i had to add a splash of milk to get the dough to a consistency i could work with, and the result was a little heavier than i had expected. the only reason that’s a problem is because i felt too full after eating one to have another! any ideas on how to make them lighter? ps. the icing was just lovely 🙂

    I made these this past Friday night to bring as a Saturday morning treat for my bowling league. I made the mistake of adding too much butter (1/2 cup instead of the 1/3 cup) and I was afraid I ruined them. Much to my surprise, they were still DELICIOUS. I used frozen strawberries, chopped up to small pieces and folded in to the batter which worked great.

    I LOVED the icing. And my league partners loved them too! They commented on how great it was how moist they were.

    I’ll definitely make these again. Cheers!

    I am always excited to try new scone recipe and this one looked like a winner. Texture of the scone is just the way we like them. However, I was disappointed that the orange yogurt overwhelmed the taste of the strawberries (I used frozen). I like using the food processor and I think the method is ideal. Next time I will use vanilla yogurt.

    I just wanted to tell you that I first made these for Father’s Day (for the hubby) and we all LOVED them. The “drizzle” makes it perfect. I’m making them again today for my neighbours who took me out for last week to celebrate my baby who is due in a couple of weeks.

    This is a great recipe! I went to the supermarket today and thought, why not buy strawberries for muffins? And then, I forgot. I´ve never tried straberries inside scones, but raisins, cheese…..

    Hi! I’ve never made scones before, but I would love to try this recipe. I was thinking of using freezed dried strawberries that I found at Target. Just pulverize it and add to the dry ingredients. I think it would add more strawberry flavor. I’ve done it before with peach cupcakes.

    Never made scones before, but after spending a lot of time in Ireland, I miss the crusty breads and the breakfasty stuff, so decided to try it. I made it using frozen strawberries and vanilla yoghurt with some orange zest. Though I only used about half the orange zest you said and I’ll probably cut it back a bit more to get more of the strawberry flavour. They were awesome though. Everyone in the family here devoured them.

    These scones are delicious! They are soft and fluffy and yummy with fresh fruit in them. I didn’t even bother making the glaze and they’re great. I also did a twist on them as a second batch. I did them with mixed berries, using 1/3 c. blueberries, 1/3 c. raspberries, and 1/3 c. strawberries, with blackberry yogurt. Mmmmm 🙂
